Some Istrian Dishes

In this section you will find the indication of some dishes split as follows: appetizers, first courses, entrees, other ingredients, desserts, wine, brandy and Smrikva juice.

APPETIZERS

  • Istarski prsut” - Istrian home made prosciutto or smoked ham is special for the several reasons and an important one is that the ham is dried by exposing it to the wind “bora”.
  • "Domaca panceta” – home made bacon
  • Istarski ovcji sir” – Istrian home made sheep - milk cheese
  • Ombolo” – home made boneless pork loin “ombolo”
  • Istarske kobasice” – Istrian home made sausages
  • Kiselis - Sottoaceti” - pickles

FIRST COURSES

  • Istarska manestra” – Istrian minestra, vegetable (beans, chickpeas, barley, young corn, lentils, broad beans, peas) stew.
  • Other ingredients: Istrian prosciutto, home made sausages, potatoes, onion, cloves of garlic, salt, pepper, olive oil, bay leaf, etc.
    • “Manestra sa bobici ili trukinjom” – minestra with corn
    • “Manestra sa koromacem ili sa slancom”- minestra with “koromac” or with “slanac”

  • Peka” or “Cripnja” – dishes made under a baking lid; you can prepare dishes that range from the octopus with potatoes to every type of meet with potatoes.
  • Slanac s pancetom” – “slanac” with bacon
  • "Bizi s dimljenom pancetom” – young beans with smoked bacon
  • Kapuz” - sauerkraut
  • Riba i skoljke” - fish specialities and shells: scampi, shrimps, lobster, cuttlefish, octopus, sea bass, frog fish, sole, gilthear, scorpionfish, crabs, pilchards, anchovies, mussels, oysters, scallops, dondole, queen scallops, vongole,  etc.
  • Buzara od skampi” – buzara with scampi
  • Istarski brodet” – Istrian fish soup
  • Sardele na savor” – anchovies “na savor”
  • Palenta i brodet” – polenta (hard corn – mush) and brodetto
  • Bakalar i posutice” - cod fish (baccala or bakalar) and home made pasta
  • Leca s kostanjima” – lentils with chestnuts
  • Fritaja sa sparugami” – scrambled eggs with wild asparagus
